About Us
The story of Antioch Acres begins many years ago when owner, Dan Lentz, began to develop health problems. One of the many factors that helped restore health over time was changing lifestyle and diet.
Dan discovered most grain based products available in stores contained modern varieties of grain which have been modified significantly from their original genetics and are also more highly processed meaning many of the nutrients and oils have been removed from store bought grain flours to make them less perishable, but as a result they are less nutritious. At times nutrients are added back to flour (called “enriched flour”) but these are not the original nutrients from the grain. In most cases these are synthetically produced nutrients added to the four. Many of these modified and highly processed grains, when consumed, have the tendency to produce inflammatory processes in some individual’s bodies.
Additionally, gluten in wheat products is causing undesired symptoms for some people including, excess fatigue, joint pain, brain fog, and more. As wheat has been bred to achieve higher yields, easier harvest, and easier to process bread products, the gluten molecule in the wheat has also increased in size and quantity resulting in people consuming far more gluten and a bigger gluten molecule than they were previously. This has contributed to a condition called “Leaky Gut” which can result in digestive problems and other inflammatory conditions.
Ancient whole grains retain the complex nutrient blend and genetics they were created with for healthy consumption, and with all the great taste that was intended. Additionally, while ancient grain wheat still contains gluten and still would not be suitable for those with Celiac Disease, many people who have symptoms of gluten sensitivity find that consuming products made from ancient wheat varieties do not experience the variety or severity of symptoms they did with modern wheat varieties.
Because many acquaintances with chronic illness and others who recognize the health benefits of ancient grains were seeking quality sources of ancient grain flour products, including wheat, corn, and more. Dan decided to utilize several acres at his home and begin growing ancient grains and milling them into natural, nutritious, and delicious flour products.
We purpose to harvest, freshly grind, and assemble some highly nutritious, easy to digest, grain products that can benefit folks who struggle with chronic illness and food sensitivities but still would enjoy eating some grain-based breakfast cereals, bread, and other baking products that they are not able to enjoy now, or have a hard time finding for sale. And for those who are being proactive with their diet and health, we hope to offer some products anyone would enjoy eating, that would also promote good health.
